Chili : Spicy Black Bean Vegetarian Chili
1 tablespoon vegetable oil
1 red onion, diced
1 green or yellow bell pepper, diced
1 clove garlic, minced
2 cans (15-ounces) black beans, drained
2 cans (14-1/2 ounces) diced tomatoes
1 cup vegetable broth
1 tablespoon Original TABASCO® brand Pepper Sauce
2 teaspoons ground cumin
1 teaspoon salt
Sour cream, optional

Heat vegetable oil in 4-quart saucepan over high heat. Add onion, bell
pepper and garlic; cook until tender, about 5 minutes, stirring
occasionally.

Stir in black beans, tomatoes (and their liquid), vegetable broth,
TABASCO® Sauce, cumin and salt. Heat mixture to boiling over high heat.
Reduce heat to low; cover and simmer 15 minutes, stirring occasionally.

Serve with sour cream, if desired.

Makes 6 servings.
